Job Summary
As an Executive Pastry Chef, you will oversee the preparation, production, and ordering for the pastry department. Your responsibilities include handling, preparing, and storing perishable products, adhering to HACCP guidelines for safe and sanitary food production. Additional duties may include menu development, inventory management, sanitation, and managing staff including hiring, counseling, coaching, and development.
Key Responsibilities:
- Prepare, produce, and order for the pastry department
- Manage high-volume pastry production for large off-premise events
Luxury Catering experience
- Oversee pastry department
- Innovate menus
- Handle, prepare, and store perishable products
- Ensure compliance with HACCP guidelines for safe, efficient, and sanitary food production
- Culinary degree preferred
- Minimum 6 years of experience in upscale, high-volume hotel and/or catering operations
- Demonstrate creative and high-quality pastry skills
- Strong knowledge of food quality and recognition of quality products
- Knowledge of current food and catering trends, seasonal ingredients, production, sanitation, food cost controls, menu development, and presentation
- Proficiency in Microsoft Office
- Knowledge of safe and sanitary food handling principles
- ServSafe or Department of Health certification a plus
